In food processor place eggplant, layer of whole wheat pasta, and a handful of mozzarella. Puree until smooth. Add water for desired consistency.&lt;br /&gt;&lt;br /&gt;Coat pan lightly with olive oil. add tomato sauce, garlic, onion and herbs. Slice eggplant into 1- 1 1/2 inch thick slices. Coat with milk and dredge with breadcrumbs. In another sautee pan, add remaining oil and lightly brown eggplant.&amp;nbsp; remove into shallow baking dish. First you will make a veggie base consisting of:&lt;br /&gt;&lt;br /&gt;* 1 small head of cauliflower&lt;br /&gt;* 1 bag of fingerling potatoes&lt;br /&gt;* cheddar or gruyere cheese (few handfuls)&lt;br /&gt;&lt;br /&gt;Steam Veggies, and puree with cheese adding water until right consistency. Keep in mind this is supposed to be thick and hearty.&lt;br /&gt;&lt;br /&gt;Baby test- Love, love, love!!&lt;br /&gt;&lt;br /&gt;Now for the Corn Chowder&lt;br /&gt;&lt;br /&gt;* above mixture&lt;br /&gt;* rest of cheese ( use one bag shredded)&lt;br /&gt;* 2 tbsp &amp;nbsp;olive oil&lt;br /&gt;* 1 clove garlic&lt;br /&gt;* 1inch onion finely diced&lt;br /&gt;* 1 can organic no sodium sweet corn&lt;br /&gt;* low sodium organc chicken stock or boulion cube&lt;br /&gt;* 2 cups water&lt;br /&gt;* fresh pepper&lt;br /&gt;* herbs de provence&lt;br /&gt;&lt;br /&gt;In large soup pot add above mixture ( should be very thick ) keep this warm on very low heat. In seperate sauce pan dissolve boulion cube, or stock with 2 cups. In small saute pan add oil, garlic, and onion- let this cook down before adding corn, coat in oil mixture and heat through. Add ladles of broth to the soup base and turn heat on high, keep adding liquid until desired. Allow to cook in own juices. when brown add tomato sauce and stir until combined. Wash thighs and peel off skin on chicken. coat liberally with curry powder. Brown chicken on both sides until golden brown but not fully cooked. set aside to cool. Take chicken off bone. Rinse pan, and with a little oil add carrots  and celery allow to wilt.  Now in soup pot add rest of the oil, onions, garlis, shallot, carrot, celery, chicken and lentils. stir until coated. Add curry powder to taste ( about 4 tbsp). Add 3 cups of water. Stir. Raise heat to a boil and then lower heat to a simmer. Let this cook down a bit. Add cous cous and stir, more water if needed. Raise heat back to a boil. Add 1/2 seasoning packet from cous cous box, fresh pepper, and Herbs de province ( a pinch). Continue stirring until cous cous is integrated. Lower heat and allow to simmer.
